I loooove squash and especially onion-y butternut squash soup! ^_^ I never thought to put apple in there – I’m trying that next time! I usually make it with butter and cream, but I’ve made it for my cousin who has dairy allergies with olive oil and no cream and it’s still very good.
You can definitely roast the seeds for squash just like pumpkin seeds, and they taste pretty much the same. I’ve done seeds from both butternut and acorn squash, and they were tasty!
