Just discovered your site.( a link on the Artisan bread site)..congratulations...I'll check you out again.
However, a quck tip for your quiche making. I've been making it for about 20-plus years as Christmas Quiche. Our family has to have it for Christmas breakfast. Similar recipe...I use Pillsbury ( or storebrand) rolled crusts for convenience. 4 eggs, 8 to 10 oz brick of cheese mostly Cheddar, 1 1/2 cups of milk, salt, pepper, pinch of nutmeg , add ingredients to blender for quick and thorough mix....you can make it the night before and store in the refrigerator....but put a label on it...so it isn't mistaken for eggnog ( not a happy sipper!) add your choice of meat, usually crumbled bacon or chopped ham to the mix or the pie crust when you're ready to bake.
However, start at 425 for 15 min. reduce to 375 for additional 15 to 20 min or until golden brown simple and now a great family tradition.

Love the videos!! You might also look into crusts made with leftovers. I have seen/heard of crusts made of rice and pasta, probably other things too. :D

Keep 'em coming!
