Steak au Poivre Recipe, wow!

This Steak Au Poivre recipe is pretty decadent, not something you want to eat every week, but it is good and easy to make.

Gardenfork Steak Au Poivre recipe aka Pepper Steak Recipe

2 T-Bone or Sirloin steaks

3 tbsp peppercorns

2 tbsp butter

1 glug of olive oil

1/3 cup irish whiskey

1 1/2 cup heavy cream

Rinse the steaks and pat dry.

Put the peppercorns in a plastic food bag, place the bag in a metal pan with a thick bottom or on a cutting board.

Use a hammer or mallet to crush the peppercorns. you don’t want to make dust, but you want them cracked.

Put the cracked peppercorns on a plate and press both sides of the steaks into the peppercorns.

Heat a large cast iron or metal fry pan on medium high heat, add a glug of olive oil and the butter to the pan, when the butter has melted, add the steaks.

Turn on you range hood if you have one, or open a window.

Cook the steaks, about 4-5 min on a side, after flipping the steaks, you can cut into them to check for doneness or use a fast read thermometer.

Remove the steaks and cover them with foil.

Pour off some of the fat that has cooked out of the steaks.

Take the fry pan off the heat, and add the whiskey. Using a long match, light the whiskey in the fry pan. Allow it to burn down. BE VERY CAREFUL.

Return the pan to the burner, and add the cream. stir the cream and allow it to simmer and cook down. When the cream has thickened – if you pull a wooden spoon thru the cream it will make a valley – it is ready.

Take the pan off the heat, put the steaks on serving plate and spoon over some of the cream. pour the rest of the sauce alongside.

Sit down now and eat.
