Eric's beef with Chris Kimball and Cook's Illustrated: True or False? GardenFork Radio

Why does Eric always poke fun at Chris Kimball: ? Mike asks the question everyone wants answered.

Today we're doing a Skype podcast with our good friend Mike in Chicago. Mike and I met when I was doing an appearance at the Chalet Nursery in Chicago, where Gardenfork friend Freya Wellin is in charge of the perennials.

Mike and I talk about BBQ contests, the Gardenfork Cardboard Box Smoker, the Fiestamovement Ikea Hack Salmon Smoker, Food Allergies, Cook's Illustrated, America's Test Kitchen, and Urban Beekeeping.

2 urban beekeeping groups I belong to are Gotham City Beekeepers and NYC Beekeepers

Mike and his wife get kids interested in science with their Mad Science presentations they do at schools. You can learn more about Mad Science here.

eric tell mike there is a good wheat free (nut and dairy free on many things too) bakery in Evanston called Rose's Bakery. http://www.rosesbakery.com/

It's been almost 4 years since my girls and I have been eating wheat free. I have many recipes. I have found that it is easiest to eat foods that are closest to their source. I hardly ever do processed stuff (makes shopping much quicker). I have a great all purposes flour mix that can be used as a substitute for anything (but gf flours must be weighed, I convert all recipes to weight and weigh my flour).

      gf all purpose flour:
1 1/2 cups brown rice flour
      1 cup white rice flour
1/2 cup tapicoa, potato or corn starch
      2 teaspoons xanthan gum

I keep it in the freezer in a air tight container.
